This is such an easy recipe and a creative twist on corn on the cob - at any cookout or dinner with friends!
Grilled Corn with Mexican Crema (Elote)
Adapted from Cooking Light
Serves 6
Print this recipe!
- 1 t. chipotle chili powder
- 1/2 t. salt
- 1/8 t. freshly ground black pepper
- 6 ears corn
- Cooking spray or olive oil
- 1/4 c. non-dairy or organic sour cream
- 1 1/2 T. nutritional yeast or grated Parmesan or cojita cheese
- Lime wedges
- Fresh cilantro, chopped (optional)
Prepare grill.
Combine chili powder, salt and pepper in a small bowl and set aside.
In a small bowl, combine sour cream and nutritional yeast or cheese.
Place corn on a grill rack coated with cooking spray or olive oil; cook 12 minutes or until corn is lightly browned, turning frequently.
Place corn on a platter; drizzle with “sour cream” mixture and sprinkle with spice mixture.
Garnish with lime wedges and cilantro, if desired.
